Entier is a French cuisine that practices nose to tail dining, it is located on the 41st floor of Alila Bangsar, the reason why we chose this place was to enjoy the skyline view of the city. The venue is not spacious and since it was an impromptu trip, we did not get the best seatings but I was super blown away with their services, the restaurant was fully booked that night but the restaurant manager was really nice, he manage to squeeze us in and the waiters were really attentive and fast I was really impressed with it.
What is nose to tail dining? I was quite puzzled since this will be the first time I came across this term. Nose to tail dining embrace the idea of nothing is wasted, which means the consumption of the whole animal instead of just the chosen parts. Sounds interesting right?
House bread with kombu butter
A basket of bread served with kombu butter, we were really hungry and helped ourselves to the bread while waiting for our mains to come.
Eggplant RM30
This was my favorite of the night, it might look a little messy but this Josper-grilled whole Australian eggplant was so flavourful, the sauce on top consist of saikyo miso cream, lime, pistachio dukkhka.
Salmon RM61
A beautifully plated dish served with cured Scottish Salmon drench in a very well executed kombu sauce which was light and creamy, seaweed dashi, sorrel and purple seaweed.
Bone Marrow & Flank RM42
Just look at that runny yolk! This dish is highly recommended, the baked beef marrow is served with an Australian flank steak tartare, quinoa and egg yolk confit. Expect a burst of flavors in your mouth with every bite!
I love the food, the ambiance and the service from the staffs, I can see myself coming back again to visit Entier French Dining, the dinner was spectacular and I can't wait to try their desserts and the lunch sets.
p/s I highly recommend that you make a reservation in advance to avoid any disappointments
